I’m headed to Poland soon, for an all-too-brief visit to one of my dearest friends. Exactly three years ago, when I was living in Krakow, Poland, I started a series on things I love about Poland. That was over on Making Places, and I only got through two of my favorite things: milk bars and the abundance of flowers. Those are definitely two things I’m excited about–especially the latter, since I’ll be there over All Saint’s Day, when Polish cemeteries get decked out with thousands of colorful candles and flowers.

I wanted to make a little update on that series, though, and as I’ve been gearing up for this short trip, I’ve been reminiscing about some of my favorite Polish things. Today I want to tell you about zapiekanka. If you’ve met me and we’ve discussed snack foods (likely!), you’ve probably heard this before. I’m sorry; I can’t get enough.

Zapiekanka is sort of a Polish fast food. Take a baguette, slice it in half the long way, top it with butter, mushrooms and cheese, and pop it in the broiler. Simple enough, right?

Now top it with green onions, fried onions, ketchup, garlic sauce, and whatever else you’re into. For just about $1.50 (three years ago, anyway), you’ve got an insanely delicious snack (or dinner, if you’re obsessed like I am).

Here’s an appetizing photo from Wikipedia:

Oh, I can’t wait.

It’s a quick snack I like to make at home, too, but it’s not quite the same, of course. If you give it a shot in your kitchen, let me know how it goes!
